Position Overview:
The Chef De Cuisine provides total responsibility for food production in Dining Services, Kitchen Staff, food preparation, presentation, and on-going training. The Chef will delegate and assign specific duties to staff members to ensure that all necessary items for meals and/or events are readily available in a timely manner. The Chef will ensure that high-level of standards for cleanliness and sanitation are well-maintained in the kitchen at all times.

• Provide direct supervision and training to all kitchen production staff.
• Hands-on preparation and planning of all meals and menus to our Health Center, Assisted Living and Independent Living quarters, employee meals, and any catered events.
• Works with Executive Chef to develop recipes for all items and the staff is properly trained in preparation of these recipes.
• Tasting menu items and designing each plate for presentation prior to service.
• Review and adjust menus 4 weeks in advance with the Executive Chef.
• Responsible for sanitation and appearance of our Kitchens.
• Ensures all kitchen equipment is well-maintained and in good repair.
• Maintains inventory and supplies.
• Ensures food is properly stored, rotated, labeled and dated per state and federal guidelines.
• Meets financial targets and goals relevant to all kitchen related costs and expenses.
• Maintains teamwork environment by assisting in the kitchen or dining rooms, in any capacity, as often as possible during meal service.

• Minimum of 3 years working experience as Chef De Cuisine and/or Sous Chef.
• Minimum 5 years experience working experience as a culinary manager.
• Minimum of 5 - 8 years of cooking experience.
• Must be Servsafe certified.
• Supervisory skills managing a staff of at least 15 people.
• Experience in a high-production kitchen with quality of standards in preparation, presentation, and execution.
• Ability to monitor strict health care diet requirements, county and federal regulations as well as best practices for food safety.
• Must have ability to create detailed menus with accurate descriptions.
• Must understand roasting, sautéing, braising and other cooking techniques.
• Flexibility in schedule to work weekends, OT, and/or Holidays.
